Livarot cheese

The LIVAROT cheese is a soft ripened cheese. Made from cow's milk collected from producers of the Bocage Ornais area. The cheese cylinder is banded with three or five strips of raffia called "service strips". It is sometimes referred as the "Colonel".

Its origins
It comes from the pays d'Auge and more specifically from the south side in between the Orne department and the Calvados department. It is an exceptional area where a unique cheese can be produced because of the richness of the grassland, the regular rainfall and the mild climate.
Tasting Recommendation:

It has s strong flavour and is well paired with full-bodied red wines but you can also savour it with a cider from Normandy or pays d'Auge. Its rind must be smooth and shiny without holes. Its colour varies between auburn and dark brown.
